Tagliatelle Bolognese $35

Traditional Beef and Veal Meat Sauce
Gluten Free (Alternative Pasta)
1. Fill a pot with 2 quarts of water and bring it to a boil. Season the water with 1 teaspoon of salt.
2. In a large saucepan, reheat the bolognese sauce set over medium heat.
3. Add the freshly made Tagliatelle pasta to the boiling water. Cook the pasta for approximately 1 minute. using tongs, gently stir and separate the strands, preventing them from clumping together.
4. After the Tagliatelle is cooked to al dente, promptly drain the pasta, reserving a small portion of the cooking water for later use.
5. Add the drained Tagliatelle directly into the Bolognese sauce. Using tongs, toss pasta and sauce together. Cook for 3 minutes on medium heat.
6. Add the butter into the sauce and pasta mixture, gently stirring until emulsified. If the pasta appears too dry, gradually add 1 to 2 ounces of the reserved pasta water.
Chef’s Tip: Generously add Parmigiano Reggiano to enhance the umami of the dish
